Congratulations Merle Griffith!

Bridget Laminack has a big surprise this Mother’s Day for her 81 year old mother, Merle Griffith! She will be visiting Mom with prizes well over $500  that she won for her mom by submitting one of her favorite recipes, Chicken Ratatouille (see  below)

Merle was born in Chireno, Texas, a city in Nacogdoches County. Bridget says her mom has always had a love for cooking and  has a bookcase full of cookbooks (Merle is always trying new recipes, and Bridget and her husband  are the lucky recipients)! 

Merle, who lives in Nederland,  was married to Bridget’s father for over 57 years, until he passed away close to 5 years agao. Merle spends her time gardening – has a green thumb, and enjoys church activities, especially with her small group of lady friends from church, who are also widowed, whom Bridget has dubbed “the posse”.   Merle had a career as a Child Development Center (CDC) teacher for 19 years at F. Baptist Church in Nederland – and was known to the staff as “Griffey”.

Merle  has 3 daughters:  Bridget (youngest) and twins (Darlene – in Corpus Christi and Charlene in Dallas) and grandson, Chris Haycraft who is 28 in Dallas and Step great-grandson, Ray Laminack, 18, of Arizona.   Bridget describes her mom as  an awesome lady, who she admires and respects tremendously, and is a whole lot of fun to be around!
